Mexican ground beef

Ingredients

1cupOnions, chopped
½cupGreen pepper, chopped
2Cloves garlic, minced
poundsGround beef
1can(28 oz.) tomatoes, chopped with juice
Salt and pepper to taste
1tablespoonChili powder
1cupKernel corn
1cupKidney beans, rinsed and drained
2cupsPotatoes, peeled and diced

Directions

Fry bacon until crisp. Drain and set aside. Sauté onion, green pepper, and garlic in bacon drippings. Add ground beef and cook until browned.

Lower heat and add tomatoes and juice, salt, pepper, chili powder, corn, beans, and potatoes. Cook 45 minutes or until potatoes are tender. When ready to serve, crumble bacon over top. Yield: 6 servings Typed in MMFormat by cjhartlin@... Source: Fare for Friends.
