Mexican mince

Yield: 2 Servings

Measure Ingredient
1 small Onion, peeled
6 ounces British minced beef or lamb
2 tablespoons Tomato ketchup
8 ounces Can chopped tomatoes
1 teaspoon Cliilli powder
8 ounces Can red kidney beans
5 fluid ounce Stock or water with
¼ \N Stock cube
3 tablespoons Canned sweetcorn
\N \N Salt and black pepper

Finely chop the onion. Place the meat and onion in a pan over a very low heat and dry fiy until golden. Ifthe meat is lean add 2 teaspoons oil. Add all the other ingredients (drain the canned beans and sweetcorn well) and simmer for 15 minutes. Serve with rice or pasta and a green vegetable.
