Meat loaf teriyaki

Ingredients

2Eggs; lightly beaten
½cupBread crumbs
½cupGreen bell pepper; chopped
1largeOnion; chopped
2Carrots; grated
2Cloves garlic; crushed
2tablespoonsSoy sauce
2tablespoonsBrown sugar
2tablespoonsLemon juice
2tablespoonsFresh parsley; chopped
¾teaspoonGround ginger
½cupBrown sugar
½cupSoy sauce

Directions

Combine all but last 2 ingredients. Form into 1 or 2 loaves and place in a 9 X 9" baking dish. Bake at 350F degrees for 30 minutes. Remove from oven and drain off grease. Mix together the brown sugar and soy sauce and pour over meat. Bake for 30 more minutes and remove meat to serving platter.

Pour sauce over sliced meat loaf or serve separately.

NOTES : Really good! A nice change of pace from a regular meat loaf. Goes well with fried rice.
