4 tablespoons Butter; softened
½ cup Sugar
2 larges Eggs
1½ cup Sugar, sifted
1 teaspoon Baking powder
1 teaspoon Baking soda
¼ teaspoon Salt
¾ cup Rolled oats
1 large Apple, tart; cored & peeled
⅔ cup Cheese, grated
½ cup Nuts, chopped
¾ cup Milk
1 Apple; sliced thin
¼ cup Butter; melted
2 tablespoons Sugar; mixed with
1 tablespoon Cinnamon

Yield: 12-15 muffins

Blend softened butter with sugar and add eggs, beating the mixture thoroughly. Sift together flour, baking powder and soda, and salt, then stir into butter-sugar mixture. Stir in oats. Chop the large peeled apple into small bits and add to dough with cheese and nuts.

Gradually add milk, stirring lightly.

Fill buttered muffin tins ⅔ full. Brush apple slices with melted butter and coat with sugar-cinnamon mixture, then top batter in each muffin tin with 1 apple slice. Sprinkle remaining sugar-cinnamon mixture evenly over top. Bake for about 25 minutes in a preheated oven.
