Mary's potato pancakes

2 | cups | Mashed potatoes; left-over |
1 | cup | All-purpose flour |
½ | cup | Maui onion; minced |
1 | large | Island egg |
Salt and pepper; to taste |
Directions
I often fix Potato Pancakes for breakfast using leftover mashed potatoes.
BTW, I always use Idaho potatoes, milk, butter and salt for my mashed potatoes. Next morning I take the leftovers (say about 2 cups) add 1 cup of flour, ½ cup minced Maui onion, and an egg. I drop them by heaping tablespoons onto a hot skillet to which I've added butter and/or olive oil.
I reduce the heat to medium and allow them to brown on one side. When I flip them I salt and pepper and wait for the other side to brown. They are delicious and a family favorite! Enjoy! Me ke aloha, Mary Recipe by: Mary Spero
