Yield: 6 servings
|½ cup||Maple sirup|
|1||Egg yolk, well beaten|
|⅓ cup||Heavy cream, whipped|
|¼ cup||Chopped pecan meats|
|1 pint||Vanilla Ice Cream|
Cook maple sirup with egg yolk in top of double boiler until slightly thickened. Remove, chill and add to whipped cream. Stir in nut meats.
Fill parfait glasses with alteernate layers of maple mixture and ice cream. Top with pieces of pineapple.
