½ cup | Sliced radishes |
½ cup | Diced cucumber |
⅓ cup | Sliced green onions |
1½ tablespoon | Vegetable oil |
2 tablespoons | White wine vinegar |
½ cup | Blue cheese; crumbled |
Salt; to taste | |
Black pepper;Coarsely ground, to taste |
Place potatoes in shallow 1½-quart microwave-safe dish, cover with plastic wrap, venting one corner. Microwave on HIGH 8 to 10 minutes until tender; coll slightly. In large bowl toss potatoes, radishes, cucumber, onions and oil. Drizzle with vinegar and cheese; toss again. Season with salt and pepper.
