Yield: 4 Servings
|1½ pounds||(4 medium) potatoes; cut into 1/2-inch dice|
|½ cup||Sliced radishes|
|½ cup||Diced cucumber|
|⅓ cup||Sliced green onions|
|1½ tablespoon||Vegetable oil|
|2 tablespoons||White wine vinegar|
|½ cup||Blue cheese; crumbled|
|Salt; to taste|
|Black pepper;Coarsely ground, to taste|
Place potatoes in shallow 1½-quart microwave-safe dish, cover with plastic wrap, venting one corner. Microwave on HIGH 8 to 10 minutes until tender; coll slightly. In large bowl toss potatoes, radishes, cucumber, onions and oil. Drizzle with vinegar and cheese; toss again. Season with salt and pepper.
