Light 'n fruity pie

Ingredients

3ouncesStrawberry gelatin powder; or any flavor
cupBoiling water
2cupsIce cubes
8ouncesCool Whip®; thawed
1cupFresh strawberries; sliced (or sliced peaches, bananas, or whole raspberries or blueberries)
1packGraham cracker pie crust; 9 inch
ounceCanned peaches (1 can) apricots; or fruit cocktail, drained
ounceCrushed pineapple

Directions

OPTIONAL

Dissolve gelatin completely in boiling water, stirring about 3 minutes. Add ice cubes and stir until gelatin is thickened, about 2 to 3 minutes. Remove any unmelted ice.

Blend in Cool Whip, then whip until smooth.

Fold in fruit. Chill, if necessary, until mixture will mound. Spoon into crust. Chill 2 hours. Garnish if desired.
