Lf taco salad

½ | pounds | Lean turkey breast, ground |
½ | pack | (10 oz) frozen corn |
½ | tablespoon | Taco seasoning (I used lower sodium version) (up to 1) |
Lettuce (we used iceberg-1/2 head) | ||

1 | slice | Purple onion |
½ | Cucumber, sliced | |
¼ | cup | Salsa |
1 | tablespoon | Ff sourcream |

(2 servings, adjust as necessary) Put turkey breast in non-stick pan, and sprinkle with taco seasoning (go easy at first-add more later). Saute until almost done. Add 2 tb water and corn. Saute until water is just about gone-taste and adjust seasoning if necessary. Divide lettuce between 2 plates, and cut and divide tomato and cucumber and onion the same way. Pile turkey mixture into center of lettuce. Make dressing by mixing salsa, sour cream, and cumin to taste.
