Leftover casserole

Yield: 4 Servings

Measure Ingredient
Leftover rice
Carrots (slightly steamed...still crunchy)
Green beans (also steamed...not to the soggy stage)
Minced garlic (I use a lot)
Seasoned salt or salt replacement
Pepper
Green onion (optional)
Cheese (I use cheddar or colby)

My family was not too thrilled about this until they tried it.......now they are always asking when we're going to have it again. I suppose canned veggies would work.......but it won't taste as good as if you use fresh ones. I have never frozen it.....there is never any leftover to freeze...:-)
