A catchall casserole

Yield: 6 Servings

Measure Ingredient
1 cup Onion; finely chopped
1 tablespoon Butter or margarine
2 cups Cooked chicken; diced (or turkey, ham, pork or roast beef)
1 cup Cooked mixed vegetables
1 can Cream of chicken soup; (10 3/4 ounce)
1 teaspoon Poultry Seasoning (For Chicken Or Turkey, Only)
1 teaspoon Celery salt
⅛ teaspoon Black pepper
½ cup Chicken broth
1 cup Grated Cheddar cheese

Place onion and butter in a 2 quart casserole. Cover with wax paper.

Microwave at high (100%) until tender, 2 to 3 minutes. Combine all ingredients except cheese, with onions. Cover with wax paper. Microwave at medium high (70%) until heated through, 12 to 14 minutes. Sprinkle with cheese. Microwave at medium high (70%) until cheese is melted, 3 to 4 minutes. Makes 6 servings.

NOTE: If using ham, use cream of asparagus soup. If using leftover roast pork, use cream of celery soup. If using leftover roast beef, use cream of mushroom soup.
