Leek and ham quiche

Ingredients

1each9 or 10 in. pastry shell
½poundsLeeks, white part only (about 2 cups) washed and thinly sliced
2tablespoonsButter
1cupHam, cubed
¼cupCheddar or swiss cheese, grated
3eachesEggs, beaten
cupMilk or light cream
teaspoonNutmeg
Salt and pepper to taste

Directions

Preheat oven to 375 degrees. Saute' leeks in butter until golden brown. Add ham. Place in pastry shell and sprinkle with cheese. Beat together eggs, milk, nutmeg, salt and pepper. Pour over leek and ham mixture. Bake 35 to 45 minutes. SOURCE:*Know Your Onions SHARED BY: Jim Bodle 8/92, 12/94
