Lebanese style potato salad

Yield: 1 Servings

Measure Ingredient
6 mediums Potatoes, boiled in jackets
\N \N Until barely fork tender,
\N \N Peeled and cubed
½ bunch Parsley
½ bunch Scallions
½ cup Lemon juice
⅓ cup Oil
¼ cup Simaq
½ \N Clove garlic
1½ teaspoon Salt

Preparation : Finely chop scallions and parsley. Add to cubed potatoes in large bowl. Mash garlic and salt. Add to lemon and oil. Pour over potatoes and mix well. Add simaq if desired and adjust seasoning.
