Kiwi preserves

Ingredients

| 4 | Kiwi fruit | |
| ¼ | cup | Lime juice |
| ¾ | cup | Unsweetened pineapple juice |
| 3 | cups | Sugar |
| 1 | 3-ounce pouch liquid fruit pectin | |
Directions
Wash 3½ pint jars in hot soapy water;rinse. Keep hot until needed.
Prepare lids. Wash kiwis; peel. Slice about ⅛" thick; set aside. In a 4 quart pot, combine lime juice, pinapple juice and sugar. Bring to a boil over med-high heat, stirring until sugar dissolves. Add kiwi slices. Reurn mixture to a boil. Stirring constantly, boil 1 minute. Remove from the heat; stir in pectin. Ladle hot preserves into 1 hot jar at a time, leaving ¼" headspace. Wipe rim with a clean damp cloth. Attach lid. Place in canner. Fill and close remaining jars. Process in water bath . (½ pints = 10 minutes )
