Kiwi muffins

Ingredients

1Baking powder
½teaspoonSalt
ounceSugar .PP
1Egg, beaten
2⅝ounceButter, melted
½cupMilk .PP
1Grated lemon rind
cupKiwis, peeled and chopped
ounceWalnuts, chopped

Directions

1. Preheat oven to 200øC .

2. Sift together the first 4 ingredients. Stir in the egg, butter, and milk, just until moistened.

3. Fold in the lemon rind, kiwis, and nuts. Fill paper-lined muffin tins full, and bake approximately 20 minutes.
