Jewelled fruitcake

Yield: 10 servings

Measure Ingredient
2½ cup Unsifted flour
1 teaspoon Baking soda
2 \N Eggs
1 \N Jar mincemeat; none such ready to use
14 ounces Sweatened condensed milk
8 ounces Green candied cherries halved, 1 cup
8 ounces Red candied cherries halved, 1 cup
6 ounces Apricots, dried, chopped
6 ounces Candied pineapple; chopped
1½ cup Pecans; chopped

Preheat oven to 300.

Grease and flour 10-inch tube or fluted tube pan. Combine flour and baking soda. In large bowl, beat eggs, stir in remaining ingredients. Blend in dry ingredients.

Pour batter into prepared pan. Bake 1 hour 30 minutes or until wooden pick comes out clean. Cool 10 minutes; remove from pan. Cool Submitted By LAWRENCE KELLIE On 10-02-94
