Yield: 2 Quarts
|2 \N||Eggs well beaten|
|1 cup||Brown sugar well packed|
|4 tablespoons||Instant coffee powder|
|½ cup||Irish whiskey or brandy|
|2 teaspoons||Vanilla extract|
|2 cups||Whipping cream|
In a medium saucepan, combine beaten eggs, milk, brown sugar and instant coffee. Cook and stir over medium-low heat until sugar and coffee dissolve and mixture thickens slightly. Remove from heat; stir in whiskey or brandy. Cool to room temperature. Stir in vanilla and whipping cream. Pour into ice cream canister. Freeze in ice cream maker according to manufacturer's directions. Makes 2 quarts.
