Irish-coffee ice cream

Yield: 2 Quarts

Measure Ingredient
2 \N Eggs well beaten
2 cups Milk
1 cup Brown sugar well packed
4 tablespoons Instant coffee powder
½ cup Irish whiskey or brandy
2 teaspoons Vanilla extract
2 cups Whipping cream

In a medium saucepan, combine beaten eggs, milk, brown sugar and instant coffee. Cook and stir over medium-low heat until sugar and coffee dissolve and mixture thickens slightly. Remove from heat; stir in whiskey or brandy. Cool to room temperature. Stir in vanilla and whipping cream. Pour into ice cream canister. Freeze in ice cream maker according to manufacturer's directions. Makes 2 quarts.
