Indian pork with honey

Indian cuisine often blends sweet honey and savory spices, as in this recipe.

In a plastic or paper bag combine cumin, cardamom, cinnamon, coriander, mace, pepper and salt. Add pork cubes; shake until pork is coated with spice mixture. Set aside. In a large skillet, heat oil over medium-high heat. Cook and stir onions and garlic until tender but not brown. Add pork to skillet. Cook and stir pork for 2-3 minutes or until browned.

Stir beef broth, honey and lemon juice into skillet. Bring to boiling; reduce heat. Cover and simmer about 10 minutes or until pork is tender, stirring occasionally. In a small bowl combine yogurt and flour; add to skillet. Stir in parsley. Cook over medium heat, stirring constantly, until mixture thickens. Spoon pork mixture over rice. If desired, sprinkle with almonds and garnish with mandarin orange segments. (Serves 4.)
