Hungarian chicken casserole

4Carrots,peeled and chopped
1largeOnion,skinned and chopped
4Parsnips,scraped and chopped
Salt and pepper
8cupsWater
4largesApples,peeled,cored and sliced
2tablespoonsFlour
½cupSour cream
¼teaspoonPaprika
1tablespoonSugar

Directions

Remove skin from chicken and place in large pot. Add carrots, onions and parsnips. Salt and pepper to taste. Add water and simmer about 1 hour. Add apples to chicken broth. Simmer until apples are tender, about 15 minutes. In separate casserole, combine flour, sour cream and paprika. Mix well. Remove chicken mixture from heat. Add 2 cups broth to sour cream and mix well. Add more broth and stir until mixture is thick and smooth. Stir in sugar. Add chicken and vegetables to broth and mix well. Serve immediately.

Makes about 6 servings.
