Hot jarlsburg muffins

Ingredients

1cupAll purpose flour
¾cupYellow cornmeal
3tablespoonsSugar
4teaspoonsBaking powder
½teaspoonSalt
1cupMilk
¼cupSalad oil
2Eggs beaten
¼cupChopped red bell pepper
1cupShredded jarlsburg
¼cupChopped green chilies; well drained
½cupFinely chopped salami

Directions

Preheat oven to 425 degrees. In medium bowl, mix flour, cornmeal, sugar, baking powder and salt until well incorporated. In another bowl, mix together milk, oil and eggs. Add to dry ingredients. Mix in bell pepper, cheese and chilies. Add salami and stir until moist. Grease twelve 2½ inch muffin pan cups. Spoon batter into muffin pan, about ¾ full. Bake until done. Test with toothpick. Remove muffins to rack . Serve warm.
