Hot beets

Yield: 4 servings

Measure Ingredient
6 To 8 cooked and peeled
Beets
2 tablespoons Margarine
2 tablespoons Chopped scallions, including
Some green tops
1 teaspoon Sugar
1 tablespoon White vinegar
Salt
Freshly ground black pepper
1 tablespoon Chopped parsley

Thinly slice the beets. In a saucepan over low heat, toss the beets with the margarine, scallions, sugar, vinegar, and salt and pepper.

Cook until tender. Just before serving, sprinkle with the parsley.
