Hominy and sausage bake

Ingredients

2cansWhite or yellow hominy; 14oz
4Eggs; beaten
8ouncesChorizo or pork sausage;
. cooked and drained
¾cupCheddar cheese; shredded
½cupGreen onion; sliced
1canGreen chilies; chopped, 4oz

Directions

Preheat the oven to 350 degrees. Grease a 9-inch glass baking dish.

In a large bowl combine the hominy, eggs, chorizo, cheese, onion and chilies if desired. Pour into the prepared dish. Bake for 30 to 35 minutes or until set. Let stand for 5 minutes before serving.
