Hominy & chicken casserole

Ingredients

| 4 | cups | Cubed stuffing mix |
| 2 | cups | Chicken, cooked and diced |
| 1 | each | Golden hominy, 15oz can |
| 1 | each | Green chiles, 4-1/2 oz can |
| ½ | each | Red bell pepper, chopped |
| ½ | cup | Parsley, chopped |
| 1 | each | Cream of mushroom soup, can |
| 1 | each | Whole kernel corn, can |
| 1 | cup | Cream or milk |
| 2 | teaspoons | Cumin |
| 1 | cup | Monterey Jack cheese |
Directions
Combine stuffing and next five ingredients in large bowl. Stir together remaining ingredients (except cheese)and combine with stuffing mix. Pour into lightly greased 2-quart shallow baking dish.
Cover lightly with foil and bake at 350f for 35 minutes. Uncover, sprinkle with cheese and bake an additional 5 minutes or until cheese is melted and bubbly
