4 cups | Cubed stuffing mix |
2 cups | Chicken, cooked and diced |
1 each | Golden hominy, 15oz can |
1 each | Green chiles, 4-1/2 oz can |
½ each | Red bell pepper, chopped |
½ cup | Parsley, chopped |
1 each | Cream of mushroom soup, can |
1 each | Whole kernel corn, can |
1 cup | Cream or milk |
2 teaspoons | Cumin |
1 cup | Monterey Jack cheese |
Combine stuffing and next five ingredients in large bowl. Stir together remaining ingredients (except cheese)and combine with stuffing mix. Pour into lightly greased 2-quart shallow baking dish.
Cover lightly with foil and bake at 350f for 35 minutes. Uncover, sprinkle with cheese and bake an additional 5 minutes or until cheese is melted and bubbly
