Directions
Combine the wine, wine vinegar and optional 'mother' in a large wine or vinegar bottle. Cover the opening with cheesecloth and then let the mixture stand in a cool, dark place for 6-8 weeks before using.
To keep the process going, withdraw no more than ⅒ at any one time.
Replace portion used with more wine. Allow to stand a week or so before withdrawing more.
