Homemade hot roll mix

Measure Ingredient
5 pounds Unbleached flour -- or
\N \N All-purpose
1¼ cup Sugar
4 teaspoons Salt
1 cup Nonfat dry milk -- instant

Combine all ingredients in a large bowl. Stir together to distribute evenly. Put in a large airtight container. Label with date and contents.

Store in a cool, dry place. Use within 6-8 months.

Makes about 22 c Homemade Hot Roll Mix.

Whole Wheat Hot Roll Mix Variation: Use 9 c of whole-wheat flour and 8 c of unbleached flour; decrease sugar to 1 c . Substitute packed brown sugar for graunulated, if desired.
