Herbed pork and apricot loaf

Ingredients

1packMAGGI Apricot Sauce Mix
¼cupDried apricots; chopped
¼cupChopped parsley

1teaspoonDried thyme or 2 teaspoons fresh thyme

Freshly ground black pepper

Directions

Combine all the ingredients, except the bacon, in a bowl.

Mix thoroughly.

Pack into a medium, greased loaf tin.

Place the bacon strips over the top of the loaf.

Cook in a preheated oven, 180 C, for 50-60 minutes or until cooked.

Turn the loaf out and serve hot or cold.
