Hensley's apple muffins

Yield: 12 servings

Measure Ingredient
1½ cup Flour
½ cup Sugar
1 teaspoon Cinnamon
¼ teaspoon Nutmeg
½ teaspoon Salt
1 teaspoon Baking Powder
½ cup Nuts -- chopped
½ cup Orange Juice
⅓ cup Cooking Oil
2 Eggs -- beaten
½ teaspoon Vanilla
1½ cup Raw Apple -- grated

Preheat oven to 375 F. Coat twelve 2½ inch muffin tins with nonstick spray. In a mixing bowl, combine dry ingredients and stirn in nuts. Blend thoroughly. In a separate bowl combine remaining ingredients. Make well in dry ingredients and stir in apple mixture just until moistened. Do not overmix. Spoon batter into tins, filling ¾ full. Bake for 20 mins. Makes 12 large muffins.
