Ham salad with cheddar dressing

cupFrozen green peas; thawed and drained
¾poundsFully cooked smoked ham; cut into 1/2 inch cubes (about 2 cups)
½Cauliflower head; broken in to flowerets
½smallRed onion; thinly sliced
Cheddar Dressing
1cupCheddar cheese; shredded (4 ounces)
¼cupMilk
2tablespoonsWine vinegar
¼teaspoonSalt
3ouncesCream cheese; softened
1Garlic clove

Toss all ingredients except Cheddar Dressing. Serve with dressing and freshly ground pepper if desired. Cheddar Dressing: Place all ingredients in workbowl of food processor fitted with steel blade or in blender container. Cover and process, stopping once to scrape down sides, until mixture is of uniform consistency, about 30 seconds.
