|1||Red pepper, seeded|
|1||Green Pepper, seeded|
|½||Yellow pepper, seeded (optional)|
|2||Stalks celery, halved|
|1||Tomato, seeded and coarsely chopped|
|1 teaspoon||Chopped parsley|
|1 dash||Paprika, curry powder, and cayenne|
|Salt And Pepper|
|⅔ cup||White Wine|
Partner poached steamed Halibut steaks with a colourful potpourri of peppers simmered in wine. For 4-6 Halibut steaks, freshly poached or steamed.
Cut peppers, onion, and celery into thin strips. Melt butter in skillet. Add prepared vegetables and all remaining ingredients, except halibut. Simmer 5 minutes. Spoon simmered vegetables and pan juices over halibut just before serving.
