Halibut & peppers julienne

Yield: 4 -6 serving

Measure Ingredient
1 Red pepper, seeded
1 Green Pepper, seeded
½ Yellow pepper, seeded (optional)
1 Onion
2 Stalks celery, halved
2 tablespoons Butter
1 Tomato, seeded and coarsely chopped
1 teaspoon Chopped parsley
1 dash Paprika, curry powder, and cayenne
Salt And Pepper
⅔ cup White Wine


Partner poached steamed Halibut steaks with a colourful potpourri of peppers simmered in wine. For 4-6 Halibut steaks, freshly poached or steamed.


Cut peppers, onion, and celery into thin strips. Melt butter in skillet. Add prepared vegetables and all remaining ingredients, except halibut. Simmer 5 minutes. Spoon simmered vegetables and pan juices over halibut just before serving.
