Guacamole con tomatillos

Ingredients

Tomatillos
3Canned green chilies, seeded
*OR*
1Serrano or jalapeno pepper
¼cupCilantro leaves, minced
IF hotter sauce is wanted
2largesRipe avocados
1tablespoonMinced onion
dashSalt to taste
dashPepper to taste

Directions

OPTIONAL GARNISH

If using fresh tomatillos, discard husks and wash. Boil in a small amount of water until just tender, about 5 minutes, drain.

If using one of the hotter fresh chilies, discard stem and seeds.

Combine tomatillos and chilies in a blender and blend until smooth.

Halve the avocado and remove seed. Scoop out pulp and mash with a fork. Stir in tomatillo mixture with onions. Add salt and pepper to taste. Garnish with cilantro if desired.
