Grilled veggies

Measure Ingredient
2 larges Vidalia onions; quartered, (or other sweet onion)
3 \N Thin green zucchini squash; unpeeled, sliced thick
1 pounds Sliced mushrooms
1 \N Red or yellow pepper; sliced

This is one of our favorites and comes from CHEZ PATRICK - our house! These ingredients are for about 4 people, but can easily be modified for company.

Cut a large piece of heavy duty aluminum foil and spray with olive oil. Put the veggies in the foil and salt and pepper. I also use some basil and Mrs.

Dash seasoning. Seal foil tightly and grill on low for about ½ hr. Check for doneness - may need a little more time. No need to add water, they make their own juice. Great for camping, too! Posted to TNT Recipes Digest by rdpatrick@... (Robert D. Patrick) on May 5, 1998
