Grilled vegetables

Measure Ingredient
Eggplant
Squash
Bell pepper
Zucchini
Portobello mushrooms
Olive oil
Salt
Pepper

Cut vegetables into 1½" slices. Place on microwaveable dish and microwave 3 minutes. Remove and brush vegetables on both sides with olive oil; season with salt and pepper. Place on hot, clean grill and cook until tender, turning once.
