Yield: 4 Servings
|1 tablespoon||Olive oil|
|1||Clove garlic, minced|
|1||Sweet red pepper, coarsely chopped|
|Pinch hot pepper flakes|
|1 can||19 oz. Italian Spice Stewed|
|2 tablespoons||Chopped fresh parsley|
|¼ teaspoon||Each salt and pepper|
|4||Italian sausages ( 1 lb)|
|4||Crusty Italian rolls|
|4 teaspoons||Freshly grated Parmesan cheese|
In heavy saucepan, heat oil over medium heat; cook onion and garlic, stirring occasionally, for 5 minutes or until softened. Add red pepper and hot pepper flakes; cook for 2 minutes.
Stir in tomatoes, parsley, salt and pepper; bring to boil. Reduce heat; simmer for 20 minutes or until thickened.
Meanwhile, cut sausages lengthwise almost all the way through. Open and place, cut side down, on greased grill over medium-high heat; cook for about 5 minutes per side or until crisp on outside and no longer pink inside.
Slice each roll in half horizontally; toast, cut side down, for 2 to 3 minutes or until just golden. Top each bottom half with lettuce and sausage; spoon tomato sauce over top. Sprinkle with Parmesan; cover with top half of roll. Makes 4 servings. Typed in MMFormat by cjhartlin@... Source: The Canadian Living Cookbook
