Grilled sausage sandwiches

Ingredients

1Onion, chopped
1Clove garlic, minced
1Sweet red pepper, coarsely chopped
Pinch hot pepper flakes
1can19 oz. Italian Spice Stewed
Tomatoes
2tablespoonsChopped fresh parsley
¼teaspoonEach salt and pepper
4Italian sausages ( 1 lb)
4Crusty Italian rolls
4Lettuce leaves
4teaspoonsFreshly grated Parmesan cheese

Directions

In heavy saucepan, heat oil over medium heat; cook onion and garlic, stirring occasionally, for 5 minutes or until softened. Add red pepper and hot pepper flakes; cook for 2 minutes.

Stir in tomatoes, parsley, salt and pepper; bring to boil. Reduce heat; simmer for 20 minutes or until thickened.

Meanwhile, cut sausages lengthwise almost all the way through. Open and place, cut side down, on greased grill over medium-high heat; cook for about 5 minutes per side or until crisp on outside and no longer pink inside.

Slice each roll in half horizontally; toast, cut side down, for 2 to 3 minutes or until just golden. Top each bottom half with lettuce and sausage; spoon tomato sauce over top.
