Grilled pork sate - bon appetit

Ingredients

3 | tablespoons | Chunky peanut butter |
2 | tablespoons | Fresh lime juice |
2 | tablespoons | Low-sodium soy sauce |
1 | tablespoon | Minced peeled fresh ginger |
2 | smalls | Garlic cloves, minced |
¼ | teaspoon | (generous) dried crushed red pepper |
8 | To 10 oz pork cutlets (about 1/4 inch thick), cut into 1/2-inch-wide strips | |
4 | 8-inch bamboo skewers, soaked in water 10 minutes | |
¼ | cup | Thinly sliced green onions |
Directions
Prepare barbecue (medium-high heat). Whisk peanut butter, lime juice, soy sauce, ginger, garlic and crushed red pepper in shallow baking dish until combined. Set aside 2 T sauce. Add pork strips to remaining sauce in baking dish and toss to coat completely. Thread pork strips onto skewers. Let stand 10 minutes.
Grill until pork is slightly charred and cooked through, about 3 minutes per side. Brush with reserved 2 tablespoons sauce and cook 30 seconds. Transfer to platter. Sprinkle with green onions and serve.
