Grilled mozzarella, tomato and basil sandw

8 | slices | Mozzarella cheese; 1-oz each |
4 | Italian plum tomatoes; sliced | |
Fresh basil leaves | ||
3 | tablespoons | Margarine or butter; softened |
Directions
To assemble sandwiches, top each of 4 slices of bread with 1 slice of cheese, slices from 1 tomato, fresh basil leaves and second slice of cheese; top with remaining bread slices.
Spread margarine on outside of each sandwich. Heat large skillet or griddle to 375 degrees. Cook sandwiches in skillet over medium heat for 2-3 minutes on each side or until bread is golden brown and cheese is melted.
