Grilled mock fillet steak

6 pounds BACON;SLICED FZ
37½ pounds BEEF GROUND FZ
1 tablespoon PEPPER BLACK 1 LB CN
3 ounces SALT TABLE 5LB

TEMPERATURE: 350 F. GRIDDLE

1. COMBINE GROUND BEEF, SALT AND PEPPER; MIX UNTIL BLENDED. SHAPE INTO STEAKS

APPROXIMATELY 1 INCH THICK BY 4 INCHES WEIGHING 6 OZ EACH.

2. PARTIALLY COOK 6 LB (100 SLICES) BACON (1½ MINUTES PER SIDE). WRAP ONE

SLICE BACON AROUND EACH STEAK AND SECURE WITH TOOTHPICK. GRILL STEAKS 10 MINUTES ON EACH SIDE OR UNTIL DONE.
