2 pounds | Boneless steak (top round; sirloin or flank) |
1 cup | Italian salad dressing; divided |
12 ounces | Large; fresh white Monterey Mushrooms cut in half (about 3-3/4 cups) |
1 large | Red onion; cut in 8 wedges |
2 smalls | Zucchini; cut in 1-inch slices (about 2 cups) |
8 larges | Cherry tomatoes |
Marinate steak in ½ cup of the salad dressing for 15 minutes. Place in the center of preheated broiler rack or grill. Discard marinade. Cook steak about 5 minutes; turn. Place fresh mushrooms, onion and zucchini around steak. Brush vegetables lightly with Italian dressing. Cook until meat is done as desired and vegetables are tender, adding tomatoes a few minutes before steak is done. Let steak stand for 5 minutes before carving. Toss vegetables in any remaining dressing. Yield: 6 portions.
