Green olive-cucumber salad

Yield: 4 Servings

Measure Ingredient
1 pack Lime-flavored gelatin; 3oz.
1 cup Water; hot
½ cup Water; cold
1 teaspoon Lemon juice
1 teaspoon Lemon rind; grated
1 teaspoon Onion; grated
½ teaspoon Salt
1 medium Cucumber; peeled and chopped
⅓ cup Green olives; onion-stuffed

Dissolve gelatin in hot water. Add cold water, lemon juice, lemon rind, onion, and salt. Chill until slighlty thickened. Fold in cucumber and olives. Pour into a 1-quart mold and chill until firm.
