Green olive-cucumber salad

1packLime-flavored gelatin; 3oz.
1cupWater; hot
½cupWater; cold
1teaspoonLemon juice
1teaspoonLemon rind; grated
1teaspoonOnion; grated
½teaspoonSalt
1mediumCucumber; peeled and chopped
cupGreen olives; onion-stuffed

Directions

Dissolve gelatin in hot water. Add cold water, lemon juice, lemon rind, onion, and salt. Chill until slighlty thickened. Fold in cucumber and olives. Pour into a 1-quart mold and chill until firm.
