Green olive-cucumber salad

| 1 | pack | Lime-flavored gelatin; 3oz. |
| 1 | cup | Water; hot |
| ½ | cup | Water; cold |
| 1 | teaspoon | Lemon juice |
| 1 | teaspoon | Lemon rind; grated |
| 1 | teaspoon | Onion; grated |
| ½ | teaspoon | Salt |
| 1 | medium | Cucumber; peeled and chopped |
| ⅓ | cup | Green olives; onion-stuffed |
Directions
Dissolve gelatin in hot water. Add cold water, lemon juice, lemon rind, onion, and salt. Chill until slighlty thickened. Fold in cucumber and olives. Pour into a 1-quart mold and chill until firm.
