| 1 | Handful diced beets | |
| 2 | cups | Vinegar |
| 2 | cups | Salad oil |
| 1 | cup | Sugar |
| 1 | tablespoon | Parsley flakes |
| 1 | pinch | Tarragon leaves |
| 2 | larges | Hunks feta cheese; crumbled |
| Green onions & ripe olives | ||
Directions
DRESSING
Mix lettuce, peppercorns, pineapple & beets in a salad bowl. Mix vinegar, oil, sugar, parsley & tarragon & sprinkle over lettuce. Garnish with crumbled cheese, green onions & ripe olives.
