|3 \N||Eggs, separated|
|6 tablespoons||Unsalted butter|
|1¾ cup||Water or milk|
|2¼ cup||Griddle Quick Mix|
Heat waffle iron. In 1 quart measuring cup or small bowl, whisk yolks with butter and water. In medium bowl, beat whites until stiff but not dry. Put Griddle Mix in 2 quart cup or large bowl and stir in yolk mixture until just blended; do not overmix. Gently fold into whites. Pour enough batter into center of iron to cover ⅔ of surface. Close and bake until waffles stop steaming, 5 minutes. Serve immediately with maple syrup or Heavenly Lemon Marmalade or with strawberries and whipped cream for dessert.
