Garlic prawns

Yield: 4 servings

Measure Ingredient
2 tablespoons Garlic puree or paste
1 tablespoon Chopped fresh coriander
½ teaspoon Cumin
1 \N Green chilli; de-seeded and
\N \N ; chopped finely
½ \N Lemon; juice of
400 grams Extra large peeled prawns; thawed if frozen
\N \N ; (13oz)
\N \N Salt and pepper

Mix together the garlic puree or paste, coriander, cumin, chilli and lemon juice and combine well. Season to taste.

Thread the prawns onto 8 skewers and brush with the garlic mixture. Cover and marinate in the refrigerator for 2 hours.

Cook on a barbecue, or place under a preheated grill and cook for 5 minutes each side until the outsides are browned. Serve immediately.
