½ cup | Grated raw onion |

½ cup | Grated zucchini |
½ cup | Unsweetened apple sauce |
1 \N | Egg plus 1 egg white |
1. In medium bowl combine carrot, breadcrumbs, ground walnuts, onion and zucchini. 2. Add egg, cheese, salt and pepper to taste. 3. Divide into 8 balls and flatten to form pancakes. 4. Heat a large skillet coated with non-stick spray. Cook pancakes over medium heat, about 6 minutes, turning to brown both sides. 5. Arrange on serving platter with apple sauce on the side.
Egg whites alone have no fat and few calories, so an extra one now and again can be regarded as a freebie. HOWEVER, if you ever use 3 egg whites for 1 serving you must count 1 meat card.
