Fruit truffles

Measure Ingredient
2 cups Dried fruit e.g. apricots; pears, raisins
2 tablespoons Brandy
¾ cup Plain biscuits
½ cup Desiccated coconut

Place fruit in food processor bowl. Process until very finely chopped.

Add brandy and stand 1 hour.

Combine fruit mixture with HIGHLANDER Lite and biscuit crumbs. Mix thoroughly.

Shape into small balls and roll in coconut. Chill until firm. Store, covered in refrigerator.
