Directions
Preheat the fryer. Using a sharp knife, slice the plantains, diagonally, about ¾-inch thick. Fry the plantains in batches until golden brown, about 3 to 4 minutes. Remove the plantains from the oil and drain on a paper-line plate. Season with salt and serve as a garnish with the suckling pig.
