2 cups | Sliced cooked sweet potatoes or yams |

½ cup | Chicken or beef broth |
2 tablespoons | Butter or margarine |
2 tablespoons | Chopped fresh thyme, dill, chervil, or savory |

In a large skillet, melt the first 2 tablespoons of butter and cooking oil until hot. Add potatoes, plantains, onion, ham, if desired, and garlic. Cook stirring frequently, about 5 minutes. Add broth. Cover and simmer 10 minutes or until plantains are tender. Add remaining butter and desired fresh herbs. Season, to taste, with salt and pepper.
