Sauteed plantains & sweet potatoes

| 2 | tablespoons | Cooking oil |
| 2 | cups | Sliced cooked sweet potatoes or yams |
| 2 | Plantains, peeled & chopped | |
| ½ | cup | Chopped green onion |
| ½ | cup | Chopped cooked ham (opt) |
| 1 | Garlic clove, minced | |
| ½ | cup | Chicken or beef broth |
| 2 | tablespoons | Butter or margarine |
| 2 | tablespoons | Chopped fresh thyme, dill, chervil, or savory |
| Salt to taste | ||
| Pepper to taste | ||
Directions
In a large skillet, melt the first 2 tablespoons of butter and cooking oil until hot. Add potatoes, plantains, onion, ham, if desired, and garlic. Cook stirring frequently, about 5 minutes. Add broth. Cover and simmer 10 minutes or until plantains are tender. Add remaining butter and desired fresh herbs. Season, to taste, with salt and pepper.
