Sauteed plantains & sweet potatoes

Quantity Ingredient
2 tablespoons Butter or margarine
2 tablespoons Cooking oil
2 cups Sliced cooked sweet potatoes or yams
2 Plantains, peeled & chopped
½ cup Chopped green onion
½ cup Chopped cooked ham (opt)
1 Garlic clove, minced
½ cup Chicken or beef broth
2 tablespoons Butter or margarine
2 tablespoons Chopped fresh thyme, dill, chervil, or savory
Salt to taste
Pepper to taste

In a large skillet, melt the first 2 tablespoons of butter and cooking oil until hot. Add potatoes, plantains, onion, ham, if desired, and garlic. Cook stirring frequently, about 5 minutes. Add broth. Cover and simmer 10 minutes or until plantains are tender. Add remaining butter and desired fresh herbs. Season, to taste, with salt and pepper.
