Sauteed plantains and sweet potatoes

Ingredients

2tablespoonsCooking oil
2cupsSliced cooked sweet potatoes or yams
2Plantains, peeled & chopped
½cupChopped green onion
½cupChopped cooked ham (opt)
1Garlic clove, miced
½cupChicken or beef broth
2tablespoonsButter or margarine
2tablespoonsChopped fresh thyme, dill, chervil, or savory
Salt to taste
Pepper to taste

Directions

In a large skillet, melt the first 2 tablespoons of butter and cooking oil until hot. Add potatoes, plantains, onion, ham, if desired, and garlic. Cook stirring frequently, about 5 minutes.
