Fresh peach fritters

Yield: 24 Fritters

Measure Ingredient
1 large Egg
¼ cup Whole milk
1 cup All purpose biscuit mix; (up to 2)
1 tablespoon Lemon juice
2 tablespoons Sugar
¼ teaspoon EACH ginger AND salt
2 mediums Peaches; peeled, pitted, and diced
Oil for frying

In a bowl, beat egg, add milk; stir in 1c biscuit mix. Add sugar, lemon, ginger, and salt. Stir in diced peaches. Add additional biscuit mix as needed until consistency of thick pancake mix. In a heavy skiller, heat 2-3 inches oil to 375 (or use a deep-fat fryer) Drop batter into hot oil by teaspoonsful; fry until golden brown on all sides. Drain on paper towels.
