Canned peach fritters

Yield: 4 -5 serving

Measure Ingredient
1 can (29 oz) sliced peaches
1 cup Flour-sifted BEFORE measuring
½ teaspoon Salt
1 teaspoon Baking powder
2 \N Eggs; beaten
1 tablespoon Melted shortening
½ cup Whole milk
\N \N Vegetable oil

Drain peaches and sprinkle lightly with flour. Sift flour with salt and baking powder. Add well-beaten eggs, melted shortening and milk. Mix well.

With a long-handles fork, dip fruit into batter. Allow excess batter to drain off. Lower fruit into hot oil (375) and fry 2-3 minutes or until light brown. Drain on paper towels. Sprinkle with powdered sugar.
