Festive fry

Yield: 4 servings

Measure Ingredient
25 grams Butter; (1oz)
1 tablespoon Oil
75 grams Swede or turnip; cut into thin
\N \N ; strips (3oz)
6 \N Peeled spring onions; diagonally cut
50 grams Chestnuts; sliced (2oz)
250 grams Cooked gammon or shoulder joint; cut into strips
\N \N ; (8oz)
\N \N Grated rind and juice of 1/2 orange
3 tablespoons Redcurrant jelly
\N \N Salt and freshly ground black pepper

1. Heat the butter and oil in a large frying pan or wok.

2. Add the swede or turnip and spring onions and stir fry for 2-3 minutes.

Add the chestnuts, gammon, orange rind and juice, redcurrant jelly and seasoning to taste. Stir fry for a further 5-6 minutes. Serve immediately.
