Festive fry

| 25 | grams | Butter; (1oz) |
| 1 | tablespoon | Oil |
| 75 | grams | Swede or turnip; cut into thin |

| 6 | Peeled spring onions; diagonally cut | |
| 50 | grams | Chestnuts; sliced (2oz) |
| 250 | grams | Cooked gammon or shoulder joint; cut into strips |

| Grated rind and juice of 1/2 orange | ||
| 3 | tablespoons | Redcurrant jelly |
| Salt and freshly ground black pepper | ||
Directions
1. Heat the butter and oil in a large frying pan or wok.
2. Add the swede or turnip and spring onions and stir fry for 2-3 minutes.
Add the chestnuts, gammon, orange rind and juice, redcurrant jelly and seasoning to taste. Stir fry for a further 5-6 minutes. Serve immediately.
