Fish fry batter

Ingredients

| ⅔ | cup | Cornstarch |
| ⅔ | cup | Cornmeal |
| ⅓ | cup | Flour |
| 2 | teaspoons | Salt |
| 2 | eaches | Egg whites |
| 4 | tablespoons | Baking powder ture of rich dairy cream. |
| Mix together all ingredients | ||

| Speed, slowly adding a little | ||
| Water at a time, until the batter | ||

Directions
Let set for at least 30 minutes, before using.
Then dredge fish pieces in plain flour, shaking off ALL excess. You only want a very thin coating on fish to make the batter adhere better. Immediately dip fish in batter and fry in hot oil.
