Fish fry batter

Quantity | Ingredient | |

⅔ | cup | Cornstarch |
⅔ | cup | Cornmeal |
⅓ | cup | Flour |
2 | teaspoons | Salt |
2 | eaches | Egg whites |
4 | tablespoons | Baking powder ture of rich dairy cream. |
Mix together all ingredients | ||

Let set for at least 30 minutes, before using.
Then dredge fish pieces in plain flour, shaking off ALL excess. You only want a very thin coating on fish to make the batter adhere better. Immediately dip fish in batter and fry in hot oil.
