|2 eaches||Egg whites|
|4 tablespoons||Baking powder ture of rich dairy cream.|
|Mix together all ingredients|

|Water at a time, until the batter|

Let set for at least 30 minutes, before using.
Then dredge fish pieces in plain flour, shaking off ALL excess. You only want a very thin coating on fish to make the batter adhere better. Immediately dip fish in batter and fry in hot oil.
